Cheese Turning Record




One of the surprise highlights of our trip to Scotland last summer was a visit to Isle of Mull Cheese, a dairy farm and cheese producer on the island. This shot was taken inside the basement they use to mature their cheeses. Each one spends 18 months in this cool room, being turned occasionally, before it is ready to sell. The cheeses are all tagged with their production date and cards at the end of each row indicate when the cheese were last turned.
