I mentioned a couple of days ago how seriously people take their barbecue (which, for my British friends, refers to the cooked meat, specifically brisket, ribs, chicken and sausage, rather than a back-garden cooking implement or party involving outdoor cooking) around here. Founders Day weekend is host to one of the largest barbecue and chili competitions I’ve seen. There must be 100 teams set up in the centre of town cooking all weekend with judging of various meats taking place over two days. These folks are members of the “Lone Star Barbecue and Chili Team” who definitely had the best field kitchen at the event. It spanned about 50ft x 15ft and had everything you could want for a weekend of smoking meat and partying. Given their trophy display, the judges apparently agreed too.
